Beer Batter Fried Catfish

6 catfish fillets
1 cup flour
2 1/2 cans beer
1 teaspoon cayenne pepper

Mix flour, beer and cayenne pepper in blender until smooth and thick. Refrigerate batter for 1 hour. Dip catfish fillets in batter and drop into hot oil and deep fry. Remove from oil and drain on paper towels. Serves 3.

Catfish with Mushrooms

1 lb channel catfish fillets
olive oil
flour
1 small onion, diced
6 ounces fresh mushrooms
2 tablespoons butter
2 tablespoons parsley
juice of 1 lemon
salt and pepper

Salt and pepper fillets to taste then roll fillets in flour until coated. In a stove top skillet sauté fillets in a thin layer of hot olive oil for five minutes. When brown turn and sauté three minutes. Put fillets in warm dish, cover, and set aside. Put lemon juice in pan with butter, parsley, onions and mushrooms. Sauté until onions are translucent. Place fillets in platter, pour mushrooms and onions over fish and serve.

Easy Catfish Amandine in the Microwave

1 lb catfish fillets
½ cup slivered almonds
½ cup butter
½ tablespoon fresh chopped parsley
½ teaspoon dill weed
½ teaspoon salt
½ teaspoon pepper
1 tablespoon lemon juice

Place almonds and butter in an eight-inch dish. Microwave uncovered on high five minutes until almonds and butter are golden brown. Remove almonds and set aside. Place catfish in butter, turning to coat both sides. Sprinkle with salt, dill, pepper, parsley and lemon juice. Roll fillets and leave in dish. Cover with wax paper and microwave on high four minutes. Uncover and sprinkle with almonds. Microwave covered on high 1 minute until catfish flakes with fork. Serves 2.

Buttery Baked Catfish

6 medium channel catfish fillets
lemon juice
1 onion, thinly sliced
celery salt
1/3 stick butter
olive oil

Preheat oven to 350 degrees. Place catfish fillets in baking pan greased with olive oil. Sprinkle several drops of lemon juice over each catfish fillet. Sprinkle celery salt over each catfish fillet to taste. Place sliced onions over catfish. Slice butter into thin pats and lay on top of onions and catfish. Cover pan with aluminum foil and place in oven. Bake 45 minutes or until catfish is done. You may baste catfish fillets during baking. Serves 3.
