Substituting Soy Milk for Regular Milk in Recipes

Soy milk is becoming an increasingly popular staple in many households. Its health benefits make it an excellent choice that is suitable for people who are lactose intolerant or vegan. It can be fun to experiment with the many different varieties of soy milk available on supermarket shelves. You can drink it plain, or try adding it to your cereal or coffee. It can even be substituted for regular cow’s milk in many recipes, so long as a few things are kept in mind:

  1. Taste Soy milk has a slightly nutty, sweet taste that can enhance the flavor of baked goods like cookies or cakes. However, the flavor might not be appropriate in a more savory dish. Before substituting soy milk for regular milk in your favorite recipe, consider whether adding a touch of sweetness would be a good idea.
  2. Texture Soy milk contains less fat than regular whole milk, which may be good for your waistline, but isn’t great for recipes that need to thicken. If you are making a pudding, for example, and want to use substitute soy milk, you may need to add in a bit of cornstarch to adequately thicken it.
  3. Color Soy milk is a little darker than cow’s milk. Its color varies by brand from a creamy color to even a bit tan. If the aesthetic appeal of your recipe is to be determined by its pure-white hue, don’t try soy milk (i.e. use regular milk for the frosting on your snowman cookies).
  4. Temperature Soy milk curdles when it is boiled, so be careful when heating it. Also, freezing will alter its texture, so stick to cow’s milk when you are making ice cream.

When using soy milk in a recipe for the first time, it may be a good idea to use half soy milk and half regular milk the first time. If all goes well, you can substitute the full amount next time. Who knows? Soy milk may even make your favorite recipe even better!
