Potatoes are a great food if your looking to eat cheap, but still have a nice meal. While there are countless uses for this simple tuber, today I just want to touch on a simple casserole. This was a weekly meal for me growing up, and now that I am on my own, it still serves me as a inexpensive yet tasty meal.
This meal provides enough for about 4 people, depending on portion size. It’s more of a guide line and a starting point than a recipe, and you should feel free to experiment and find your own style. You will, however, need the following ingredients:
Cream of Mushroom Soup
1) Prepare Potatoes and Carrots
Peel and chop 4-5 large potatoes. Peel and chop two carrots as well. Place them both in a large microwave safe bowl and cover with water. Microwave for 8 minutes on high. Drain off the water.
2) Ground Beef and Onions
Cut up one small white onion. With between ½ and 1 pound of ground beef, fry in skillet till ground beef is browned. Make sure meat is fully cooked.
3) All together
In a greased casserole dish, mix together the cooked veggies (after draining water off) and cooked ground beef/onion. Pour one can of mushroom soup and one can of milk over the veggies and meat. Add in a teaspoon of salt and mix together. Add more milk if necessary to cover the veggies. Cook in the oven for one hour at 350 degrees. The top will brown significantly, so don’t be alarmed. After an hour, let cool for a few minutes before serving and then Enjoy.
While I feel that the cream of mushroom and ground beef are the best combination. I have had this same basic meal substituting in cream of chicken and cooked chicken instead. This also makes for a good casserole. I have even enjoyed this meal when I didn’t have any meat to add, and found that the potatoes by themselves are decent.
